Affordable Comfort Food/ Turkey Pot Pie

I like to buy whole turkeys when they go onsale. I can get 3 meals from 1 turkey. What do you do with left over Turkey?
Throw it in the fridge.

Turkey Pot Pie

Makes enough for a small army! Usually takes me 30-45min. Cost about $8.00 but makes enough for 2 meals. You can eat 1 and freeze the other, or take the other to a sick friend.
Preheat oven to 400*

In stock pot add,
2 cans chicken broth
6 peeled chunked potatoes
Add salt, generous amount of pepper, and other seasonings.
( I use garlic garlic from TastefullySimple)
Boil 15 min
OPTION- If you are making quick version use canned potatoes. And remove boil time.
While it is boiling cube left over turkey and add it to potatoes.
Add
1 bag Greent Giant Carrots
1 bag Green Giant Peas
1 bag Green Giant green beans
bought at Walmart $1.27 use $1MFC= $.27X3= $.81
OPTION- I use 1 bag Tastefully Simple Perfectly Potato Soup Mix, but you can use 2 cans of cream soup to substitute.
1 can cream of Chicken soup
1 can cream of Mushroom or celery soup
Let simmer a few mins.
Mix up 3 boxes of Jiffy Mix cornbread per Manfacter's instructions.
Pour Filling into casserole dish filling 1/2 way. Usually makes 2 BIG casserolle dishes
Cover with cornbread mix and bake 20min. or until golden brown
OPTION-You can also cover with Grands biscuits instead if you got a good deal on them! You need like 3-4 rolls.
